Rudi’s Sel de Mer is making its debut as an exclusive one-night experience on board select Holland America Line ships. Its cuisine is inspired by the iconic Cote d’Azur, where the Mediterranean Sea influences everything—the food, wine, architecture and leisurely way of life. This new dining experience will take place in the Pinnacle Grill, which will be transformed, for the evening, into an intimate seafood brasserie, offering a contemporary twist on timeless French classics such as fruits de mer, salt-encrusted whole fish, scallops and bouillabaisse. $49 per person.
